Chicken fajitas

What is more attractive than a man who can cook, you ask? A man who can make chicken fajitas! The first time I had chicken fajitas was when my husband - then boyfriend - cooked some for me.


I remember waiting at the table in our cosy little kitchen when he carried the skillet over, still sizzling. The onions, the peppers, the smoked paprika - everything looked wonderful and smelt even better.


I should say here that fajitas are relatively little known in my culture and so to me, the whole thing was most exotic. I had never even seen a fajita before, let alone assembled one myself.


He showed me how to fill the flatbread with some of the chicken mix, layer it with dollops of sour cream (another first for me!), guacamole, some salsa, and jalapenos and then fold them all together. Simple!

There is, however, an art to this - you cannot stuff the bread with too much or else, the wrap won't fold over into a neat little burrito. If you do, the filling will spill and you will be covered in sauce as you try to eat it. I did not know that.


Nevertheless, it was the best dinner anyone had ever cooked for me. Comforting, warm and slightly messy - you can never go wrong with chicken fajitas whether you are looking for a nutritious dinner (or to impress a partner)!

Ingredients:


For the marinade

  • Chicken - 1 kg

  • Minced garlic - 1 heaped teaspoon

  • Salt - 0.5 teaspoon

  • Cumin - 1 teaspoon

  • Cayenne pepper powder - 0.5 teaspoon

  • Yoghurt - 1.5 tablespoons

  • Lemon juice - splash

  • Cholula sauce - optional

  • Olive oil - 1 tablespoon


For the sauce

  • Onions - 2

  • Peppers - 1

  • Olive oil - 1 tablespoon

  • Garlic powder - 0.5 teaspoon

  • Turmeric - 0.25 teaspoon

  • Smoked paprika - 0.5 teaspoon

  • Black pepper powder - 0.25 teaspoon



Recipe:

  • Cut the chicken into strips.

  • Marinate the chicken strips with the ingredients for the marinade listed above.

  • Keep your marinated chicken covered for 30 minutes.

  • While the chicken is marinating, slice the onions and peppers.

  • Heat up some oil in a pan.

  • Cook the onions until they have softened a little.

  • Add the peppers and stir together.

  • Now, add the garlic powder, turmeric, paprika and black pepper to the onions and peppers in the pan and mix thoroughly.

  • Add the marinated chicken to the pan.

  • Mix everything well together, cover and cook on a high heat for 5-10 minutes until the chicken starts releasing water.

  • Take the lid off, stir well, and cook on a medium heat until chicken is fully cooked.

  • To assemble your fajitas, place some of the chicken mix on a piece of flatbread. Add a dollop of sour cream, some guacamole, some salsa, 2-3 pieces of jalapenos, and fold the edges over to make a wrap.
